Curriculum and Modules

The curriculum of the Master in Food Science and Technology is designed to develop comprehensive theoretical and practical knowledge through the study of complex food systems, building upon a foundation in mathematics, physics, chemistry, and biochemistry. In-depth study of the chemical and biochemical properties of food components, including macronutrients, micronutrients, and bioactive compounds. Students learn advanced analytical techniques used in food characterization and quality assessment.

Food Microbiology and Safety

Covers the microbiological aspects of food production including foodborne pathogens, spoilage organisms, beneficial microorganisms, and fermentation processes. Emphasis is placed on food safety management systems and hazard analysis.

Food Processing and Engineering

9 ECTS

Explores the principles and technologies of food processing operations including thermal processing, drying, refrigeration, and novel non-thermal technologies. Students gain hands-on experience with pilot-scale equipment in the department's laboratories.

Food Quality Management and Sensory Analysis

6 ECTS

Examines the sensory, nutritional, and technological dimensions of food quality. Students learn to design and conduct sensory evaluation panels and implement quality management systems in agri-food production.

Agri-Food Economics and Marketing

Provides knowledge of economic principles applied to the agri-food sector, including market analysis, consumer behavior, supply chain management, and entrepreneurial skills for developing business-oriented strategies in the food industry.

Food Packaging and Shelf-Life

Covers the science and technology of food packaging materials and systems, including active and intelligent packaging, sustainability considerations, and methods for predicting and extending product shelf-life.
