Program Overview: Operations Leadership in Food Manufacturing
The Operations Leadership in Food Manufacturing graduate certificate at Conestoga College is a one-year, full-time program designed for students who have completed a degree or diploma in science or engineering and want to pursue a supervisory position in the food manufacturing industry. The program develops skills and knowledge with direct applicability in the food manufacturing environment, integrating leadership concepts in communication, performance management, problem-solving, and decision-making.
Course materials are applied in a food manufacturing pilot plant environment at Conestoga's Craig Richardson Institute of Food Processing Technology, which features an 8,000-square-foot plant with processing lines for beverages, baked goods, and vegetables, as well as a food testing laboratory. This facility is the only one of its kind in Canada and supports one of the largest manufacturing sectors in the province.
You will use continuous improvement methodologies, including Lean Six Sigma, project management, equipment maintenance, and food safety and quality assurance strategies to design systems that lead to excellence in manufacturing. Upon completion, graduates will have practical experience in project management and leadership, preparing them for middle management roles in food manufacturing operations.

Curriculum & Course Modules
The Operations Leadership in Food Manufacturing program delivers a comprehensive suite of courses that combine theoretical knowledge with hands-on application in a pilot plant environment. Students develop competencies across food safety, quality assurance, continuous improvement, equipment maintenance, and leadership, preparing them for supervisory careers in the food manufacturing sector.
Introduces students to food safety hazards, their negative impact on the food industry, and the benefits of developing strong food safety control programs. You will learn to understand and apply food safety regulations, sanitation requirements, and traceability systems specific to food manufacturing.
Develop best industry practices in Lean Six Sigma and Total Preventative Maintenance to support continuous improvement processes in food manufacturing operations. Students learn to design systems that lead to excellence in manufacturing and business processes.
Develop skills and knowledge required to supervise food processing operations and supply chain from purchasing to shipping. Students interpret information regarding Overall Equipment Effectiveness (OEE) to identify opportunities for improvement of the manufacturing operation.
Select and use appropriate and effective principles and practices of team-building and leadership to implement and maintain new procedures and practices in all areas of the manufacturing operation. Covers communication, performance management, and decision-making skills.
Provides practical experience in project management methodologies applied to food manufacturing environments. Students learn to plan, execute, and monitor projects that drive operational improvements and meet business objectives.
