The Operations Leadership in Food Manufacturing graduate certificate at Conestoga College is a one-year, full-time program designed for students who have completed a degree or diploma in science or engineering and want to pursue a supervisory position in the food manufacturing industry. Course materials are applied in a food manufacturing pilot plant environment at Conestoga's Craig Richardson Institute of Food Processing Technology, which features an 8,000-square-foot plant with processing lines for beverages, baked goods, and vegetables, as well as a food testing laboratory. This facility is the only one of its kind in Canada and supports one of the largest manufacturing sectors in the province.

You will use continuous improvement methodologies, including Lean Six Sigma, project management, equipment maintenance, and food safety and quality assurance strategies to design systems that lead to excellence in manufacturing. Upon completion, graduates will have practical experience in project management and leadership, preparing them for middle management roles in food manufacturing operations.

The Operations Leadership in Food Manufacturing program delivers a comprehensive suite of courses that combine theoretical knowledge with hands-on application in a pilot plant environment. Students develop competencies across food safety, quality assurance, continuous improvement, equipment maintenance, and leadership, preparing them for supervisory careers in the food manufacturing sector.

Principles of Food Safety and Quality Assurance

Introduces students to food safety hazards, their negative impact on the food industry, and the benefits of developing strong food safety control programs. You will learn to understand and apply food safety regulations, sanitation requirements, and traceability systems specific to food manufacturing.

Lean Six Sigma and Continuous Improvement

Develop best industry practices in Lean Six Sigma and Total Preventative Maintenance to support continuous improvement processes in food manufacturing operations. Students learn to design systems that lead to excellence in manufacturing and business processes.

Food Manufacturing Operations

Develop skills and knowledge required to supervise food processing operations and supply chain from purchasing to shipping. Students interpret information regarding Overall Equipment Effectiveness (OEE) to identify opportunities for improvement of the manufacturing operation.

Leadership and Team Management

Select and use appropriate and effective principles and practices of team-building and leadership to implement and maintain new procedures and practices in all areas of the manufacturing operation. Covers communication, performance management, and decision-making skills.

Project Management

Provides practical experience in project management methodologies applied to food manufacturing environments. Students learn to plan, execute, and monitor projects that drive operational improvements and meet business objectives.

Equipment Maintenance and Plant Operations

Covers preventive and corrective maintenance strategies for food processing equipment. Students gain hands-on experience with bakery, fresh vegetable, and beverage production lines in the college's pilot plant facility.
