Program Overview: Food Science and Nutrition MA+
The Food Science and Nutrition MA+ at Kaunas University of Technology (KTU) provides students with the knowledge and skills to develop innovative food technologies based on the principles of the bioeconomy and healthy nutrition, and to manage food quality and safety projects. This internationally recognised master's programme is accredited with the ASIIN Seal and the EQAS Food Quality Label, making it the only postgraduate programme in the Baltic States to hold this prestigious quality mark.
The programme combines advanced knowledge in food chemistry, microbiology, technology, safety, and nutrition with practical, research-based learning. Students gain hands-on experience while working in modern food technology labs equipped with pilot-scale technological lines and conducting research in state-of-the-art laboratories at the Lithuanian Food Science and Technology Competence Centre.
KTU's unique MA+ study model allows you to either pursue excellence in your chosen speciality field or strengthen your interdisciplinary competencies by choosing different elective study paths. Advanced Food Chemistry and Analysis
6 ECTSExplores the chemical composition of food products, their characteristics, and transformations during processing. Covers advanced analytical techniques including chromatography and mass spectrometry for food component identification.
Food Safety and Toxicology
6 ECTSFocuses on identifying potential toxins in food and their effects on human health. Students learn to conduct food safety risk analysis and select appropriate risk management measures.
Food Technologies and Biotechnologies
6 ECTSCovers innovative food production technologies and sustainable production processes, with emphasis on bioeconomy principles. Includes practical work with pilot-scale technological lines for bread, beer, meat, fish, and dairy products.
Personalised Nutrition and Health
6 ECTSExamines the principles of personalised nutrition and its importance for the health of target consumer groups. Students learn to develop healthy food products based on the latest advances in food science and nutrition.
Food Safety and Quality Management
6 ECTSCovers the implementation and control of food safety and quality management systems, including food safety legislation, external and internal audit processes, and compliance with international standards.
Master's Thesis Research
30 ECTSAn independent research project where students plan, organise, and carry out scientific and applied research in the field of food science and safety. Culminates in a written thesis and oral defence.
