The language of education for the Gastronomy and Culinary Arts Non-Thesis Master's Program , which will start accepting students in the Fall semester of the 2023-2024 Academic Year, is Turkish.
This program will enable students to take part in various projects at home and abroad in innovative and creative ways, and to have the necessary equipment to work in the developing field of gastronomy with a more conscious approach in the sector.
At the end of the education, students who meet the conditions specified in the Istinye University Postgraduate Education and Training Regulation and successfully complete their credit courses and term project are awarded a Gastronomy and Culinary Arts thesis master's diploma.
The Purpose of the Program is
to train sector employees who will follow all kinds of local and foreign written or visual publications on different topics such as Turkish cuisine and world culinary culture, food history, cooking techniques, food pairing and food styling, evaluate the results, make studies and practical presentations for the promotion and development of local and world gastronomy in various countries and cities in Turkey and the world, and create innovation in line with these researches. The Non-Thesis Master's program to be opened also aims to; conduct research on the preservation of food products for a long time without losing their properties, more efficient use of raw materials, evaluation of waste materials, transformation into new products or minimizing loss, eliminate problems that may arise during production with technical knowledge and skills, ensure the continuation of functional management, research the most appropriate production methods as a manager, conduct low-cost studies on the production of the best and most economical product, and supervise production at all stages from raw materials to the consumer.
