Overview
Our university's Gastronomy and Culinary Arts undergraduate program has been planned by taking into account different and innovative models in order to train future leaders in the field. In this field, which also includes difficulties, the technical skills, management skills and academic studies that a chef should have have been carefully and balancedly brought together in the program. While the aim is to provide students with the knowledge and skills to manage their own businesses with business-based courses, chef/manager candidates will be able to present the skills they gain in practice courses to their customers as original culinary arts.
We offer a different teaching approach with our competent staff who have education and experience at leading universities. Our students will have the chance to do an internship of 30 working days each at the end of the second and third academic years in their fields. As the only foundation university in Alanya, we offer support that will open the doors of working abroad to our students with many agreements within the Erasmus+ program.
As the Gastronomy and Culinary Arts Department, we ensure the integration of students' theoretical and practical education with internship training. Our curriculum has been prepared taking into account the four main foundations of Gastronomy and Culinary Arts education which can be listed as kitchen skills, science, business and culture. Our students will graduate by completing 240 ECTS credits at the end of their undergraduate education. Our students will be provided with knowledge and skills in the fields of culinary techniques, Turkish and world cuisine, food hygiene, food safety, food science, nutrition science, menu planning, sensory analysis, accounting, service marketing, restaurant design and food & beverage management etc. In addition to these, they will be provided with the opportunity to improve themselves by following elective courses such as Bakery Production, Molecular Gastronomy, Cake Making & Decoration and Chocolate Production Techniques in the subjects they want to specialize in according to their areas of interest.
The Gastronomy and Culinary Arts undergraduate program provides students with skills in food preparation and food safety, as well as competence in how to prepare recipes and how to create and develop their own recipes. As a result of successfully completing their education, they will be able to continue their professional lives depending on their professional goals; They will build their own careers by continuing their careers as chefs, head chefs, managers, R&D specialists, editors, writers, auditors, teachers, academics and entrepreneurs.
